Whether you're celebrating Easter, Ostara, or even Hares and Eggs Day (a folkloric spring festival rooted in European traditions), one thing is clear—this season is all about renewal, fertility, and of course… the Easter Bunny?! Rabbits have long symbolized fertility and new life due to their rapid reproduction and connection to springtime. And what do bunnies love most? Garden-fresh produce!

Luckily, you don’t have to be a bunny to enjoy the amazing health benefits of spring veggies like carrots, beets, and kale. Read more below about why we love this recipe for all it’s nutritional benefits!

INGREDIENTS

  • 6 C kale

  • 6 large carrots

  • 2 large beets

  • 1/2 large white onion

  • juice of 2 lemons

  • 1/4 C honey

  • 1/4 C olive oil

  • Optional: crumbled goat cheese

DIRECTIONS

  1. Wash and peel carrots and beets.

  2. To prep carrots, slice length-wise and cut in thirds.

  3. To prep beets, peel and slice in quarters and cube until bite sized.

  4. Heat a skillet up to medium/high heat and coat lightly with olive oil.

  5. On heated skillet place carrots sliced-side down and cubed beets. Sear carrots and beets until a nice char develops, about 3-5 minutes on each side. Cooking may have to be done in smaller batches depending on skillet size.

  6. While the carrots and beets are cooking, prepare dressing by whisking together lemon juice, olive oil, and honey in the salad serving bowl.

  7. Thinly slice (or use a mandolin for) white onion and place in serving bowl. Toss with dressing.

  8. Wash and prepare kale by chopping or ripping leaves into bite-sized pieces. Add to serving bowl and toss.

  9. Lastly, top salad with charred carrots and beets and crumble goat cheese, if desired.

  10. Enjoy!
